Coffea stenophylla is a coffee species originating from West Africa. Although it has small berries and low yield it has gained recognition recently for its ability to bear fruit at lower altitudes and higher temperatures and still produce coffee with comparable sweetness and complexity to Arabica.
The C-market is the world benchmark for Arabica coffee, is traded through the ICE exchange in New York largely via ‘futures’. This means physical coffee rarely exchanges hands when traded through the exchange. Instead, it is either a bet on the price of coffee at a future point in time, or used as a hedge by importers etc. that have delivery obligations at a future point in time.
The two most important aspects of your brew water are total alkalinity and quantity of magnesium and calcium ions. The former manages pH levels and affects how acidity is presented in the cup, and the latter helps extract the nuances and flavours in the coffee in different ways.
