‘Selective picking’ is the process of picking coffee cherries several times over a few weeks. Each time, the picker only pick the ripe cherries. This ensures the highest quality as cherries picked too early have a negative impact on the cup.
Recipes are less confusing to communicate in weight rather than volume terms. Volumetric measurements like ‘cup’ or ‘scoop’ etc. reveal the space/capacity an object has. However, 1 cup of flour is 120g, and 1 cup of sugar is 200g, which creates room for huge errors when following a recipe. Weight tells you how heavy an object is and therefore 20g of coffee will be the same no matter which container its in.
