The two most common pours are circle and centre pours. The former agitates more and wets the coffee bed more evenly, giving you higher extractions. This can however, increase draw down times and also reduce brightness. The latter is much more focused on one part of the coffee bed and leads to much faster draw downs. These pours tend to accentuate acidity and clarity but can lack sweetness and balance. Using a combination of the two can be a great way to combine their strengths and dial in a given coffee.
