Starbucks new ‘Oleato’ collection in Italy features one hot drink (latte), one cold brew and one iced espresso, all mixed in with a spoonful of extra virgin olive oil. This combination of the Mediterranean ritual of drinking a teaspoon of olive oil a day for its benefits, and their coffee habit creates what Howard Schulz calls “a velvety, buttery flavour”. The reviews have been mixed at best, and the health benefits remain to be seen!
Using TDS to determine extraction has its limitations, the biggest one being that you have no idea which organic molecules have been extracted. Two brews of the same coffee at the same TDS and extraction can taste drastically different. Professor Hendon’s latest research project aims to overcome this by using electrochemistry to determine both how much, and what molecules are being extracted.
While big changes in temperature have fairly small impacts on extraction percentage, even small changes in temperature have a significant impact on flavour. It seems like a similar number but a different mix of organic molecules are being extracted depending on what the brew temperature is.
