Following up from last week on cracks during roasting, light roasts are stopped right after first crack, medium roasts end somewhere between first and second crack, and dark roasts are taken beyond second crack.
Did you know that just one defective bean can ruin your entire cup and make it undrinkable? For example, a green bean that is blackened from over fermentation can impart a sour and phenolic taste when roasted and brewed.
Coffee grows in what’s called the ‘bean belt’, along the equatorial zone, as these regions provide the perfect climate for it to flourish. The belt is located between the Tropic of Cancer and Tropic of Capricorn (<25 degrees North and >30 degrees South).
