1 Fun Thing
The mantis shrimp has the most complex visual system of any being in the animal kingdom. For eg: Humans have 3 photoreceptors (red, green and blue), whereas the mantis shrimp has 16 (!) including UV, visible and polarised light, making it nearly impossible for us to even imagine the world of colour they see.

When you heat milk and add air by whipping or steaming, proteins like casein form spheres around the air bubbles, stabilising them. Fat in the milk disrupts the protein layer and destabilizes the bubbles, but without it, your foam would be dry. A delicate balance of the two gives you the perfect, creamy mouthfeel.
The longer you roast coffee, the more the acids are broken down and Maillard flavours like chocolate, roasted nuts and bitters come to the forefront. This is why dark roasts have lower perceived acidity than medium and light roasts, even though variances in pH are minimal.
