Eugenoides, a recent favourite in coffee competitions, is a rare coffee species and also one of the parents of Arabica. With less caffeine than Arabica, bitterness is reduced and inherent sweetness is highlighted.
Contrary to popular belief, caffeine is unaffected by the temperatures at which coffee is roasted. So a given weight of beans, irrespective of how light or dark they are roasted, will contain the same amount of caffeine.
Circa 250 volatiles are present in the aroma of green coffee, and roasted coffee has more than 800, making it one of the most complex beverages in the world, even more so than wine in some ways.
