1:3 — Swoosh! Brew time challenge, and paper filtering your espresso?
Edition No. 16
1 Fun Thing
In 1971, Phil Knight of Blue Ribbon Sports, now known as Nike, hired Carolyn Davidson, a graphic design student at the time, to design a logo. She designed the now infamous Swoosh and was paid $35 (!) for her work. He then re-invited her to Nike in 1983 and gave her an undisclosed amount of shares as a thank you!

If your brew times with the South Indian filter are too long and grinding coarser and reducing agitation aren’t helping, try this. Check that the top chamber isn’t pressed down too tightly onto the bottom one as this creates a perfect seal and drastically slows the draw down. Similarly, don’t push the top lid down too tightly either.
Adding a paper filter to the bottom of the portafilter basket when brewing espresso has super interesting results — it increases the flow rate and the extraction considerably. Since most of the fine particles are filtered out, you lose the beautiful tiger striping, but gain clarity. If you haven’t tried paper filtering, it’s definitely worth a shot (pun totally intended).
Coffees can have different certifications like Bird-friendly, Organic, Rainforest Alliance, Fair Trade etc, with each having different implications, and most not being limited to just coffee. For eg: Fair Trade focuses on producers and helps them develop more equitable trade partnerships, usually combining higher prices with social and environmental standards. Different sets of Fair Trade criteria for different organisation types are outlined here.
Have you'll experimented with an aeropress filter at the bottom of a South Indian filter? It allowed me to grind much finer and gave me some interesting results.
