3 Coffee Facts
Pouring fast with the kettle spout close to the coffee bed creates a laminar flow of water that can dig a hole in the bed and cause channeling. This smooth flow of water is also less efficient at disturbing and agitating the coffee effectively. So lowering the flow rate and keeping the kettle low can help you achieve low agitation pours without these side effects.
When pouring water out of a kettle, the distance between the tip of the spout and the point at which the stream of water coming out breaks up into smaller droplets is called the break up length. Holding the kettle so that the stream of water hits the slurry just before this break up point will give you the maximum agitation.
Temperature affects the stream of water coming out of your kettle and at boiling point this stream becomes a spluttering mess. So in order to have a controlled stream of water and achieve good agitation it’s wise to stay a couple of degrees below boiling to keep your kettle from misbehaving.
