Seahorses are tiny but amazing creatures. They are the only species where the male gets pregnant and gives birth. Gestation varies from 14 days to 4 weeks and giving birth can be a long process with contractions lasting up to 12 hours! Seahorses have excellent eyesight and their eyes are able to work independently on either side of their head. This means they can look forwards and backwards at the same time!

Chicory powder, made from roasted chicory root, has been used as a coffee substitute as early as the early 1800s during Napoleon’s Blockade against the British Empire. Its use has gone up during economic crises like World War II. During the Civil War, when the port of New Orleans was cut off and coffee imports dried up, chicory was used extensively to stretch out coffee supplies, and chicory coffee is still a New Orleans favourite. Chicory mixed into coffee powder is popular in India for preparing South Indian filter coffee, and it is also used in parts of Southeast Asia.
Does 15g in 40g out in 7 to 15 secs sound like good numbers for a shot of espresso? You’re probably thinking NO WAY, that’s going to be really under extracted. Well science has shown that grinding coarser, pulling longer ratios with much higher flow rates can yield very high extractions with a lot more consistency from shot to shot. Turkish coffee is brewed with a special coffee maker called a cezve or ibrik. This unique drink is brewed with ultra finely ground coffee (almost as fine a talcum powder) and water boiled in a pan of sand that is heated on an open flame. The brew is bold, strong and has a gritty texture due to the presence of very fine particles. Have you tried it?
