The charge temperature is the temperature that your roaster is pre-heated to right before the green beans are dropped in. This may not sound that important but you’d be surprised at how much roasters obsess over this as dropping the beans in too early or too late can easily ruin your entire roast.
Once the charge temperature has been achieved, the green beans are dropped in. The temperature plummets as the probe tries to find equilibrium between the air temperature in the roaster and the beans which are at room temperature. The lowest temperate that it hits before starting to go up again is referred to as the turning point. This is carefully monitored as it has a significant impact on how the rest of the roast plays out.
