Green coffee is usually sold at moisture levels between 8-12%. For obvious reasons, farmers prefer a number on the higher side as they’ll make more money selling fewer beans, and buyers want the opposite so they can get more for their money and have a lower risk the coffee going bad in transit or during long periods of storage.
Estimates of the global coffee market size vary greatly, from $126.38 billion in 2022 at the conservative end, and $495.5 billion in 2023 revenues at the aggressive end. In Jeffrey Sachs paper, he suggests that the last reliable estimate of global coffee revenues based on retail sales was $200 billion in 2015. Interviews with coffee experts suggest that this number has grown to $250 billon in 2019. This variance of information is due to how fragmented the coffee market is with several players, in addition to the lack of clarity in what the size of the market refers to, making the need for clearly defined data important to coffee’s progress.
Pacas is a natural mutation of the Borboun varietal and is a fairly high yielding, shorter dwarf tree. The variety was discovered in 1949 on a farm owned by the Pacas family in the Santa Ana region of El Salvador and is capable of producing very smooth, fruity cups of coffee.
