3 Coffee Facts
Even today a large percentage of Kenyan coffee is sold through cooperatives. These are centralised stations that process coffee from multiple small-holder farms and auction them out to green buyers. A farm needs to become a member in order to have their coffee sold through a coop who then take a percentage of the sales in exchange.
It is important that when coffee is processed naturally, it is dried in very thin layers. This aids in more even drying giving the coffee a much cleaner cup by avoiding any over ripe or rotten flavours from developing.
This hasn’t been proven yet, but the theory with soaking coffee in fresh, clean water before drying is to try and get all the beans to roughly the same moisture. That way you have less variance from one bean to the next make roasting a lot easier.
