3 Coffee Facts
Coffee culture has often been described in waves. The first was characterised by low prices, mass production, no distinction in origin. The second wave, with the advent of Peet's Coffee in the 1960s inspired brands such as Starbucks and marked a focus on experience and quality. The third wave of coffee, characterised by specialty coffee, is associated with higher quality and traceability. Going forward, however, the SCA and other industry professionals believe that different waves of coffee will occur concurrently in different parts of the world.
Airflow is a critical variable in coffee roasting and has a significant impact on taste. Too low of an airflow means lower temperatures that can mute acidity and make the coffee taste flat. Too high and the added heat can lead to issues like tipping or excessive sourness.
A super useful trick to check airflow in a coffee roaster is to hold a lighter flame a few centimetres away from the trier port and see how much it bends into the hole. With some practice you’ll be able to set the right airflow just using the angle of the flame.
