He speculates that poorly soluble compounds that taste bad, stick to the fines (and other particles) and can end up being dislodged when brewing if they’re agitated too much.
When dialling in a light roast espresso, a slightly longer ratio of ~1:2.5 is good place to start as these coffees are less porous and therefore require more water to fully extract them.
