A group of cheetahs are being reintroduced in India next week after more than half a century of being extinct in the country! This conservation effort means the cheetahs are making the long journey from South Africa and Namibia. It is the first time a large carnivore is moving continents to be reintroduced in the wild.

In percolation brews like espresso, pour overs and the South Indian filter, fresh water moves through a bed of coffee, thereby extracting the solubles along the way. One of the biggest challenges with this style of brewing is ensuring that water flows evenly flows though all of the ground coffee. Techniques like distribution and swirling help improve consistency.
In immersion brews, like the French Press, Ibrik and AeroPress, ground coffee is steeped in water for a period of time, and the water extracts the solubles from the grounds. Ground coffee absorbs ~2x its weight in water, so immersion brewing loses some fully extracted coffee to the grounds, unlike with percolation where the water that’s absorbed towards the end of the brew contains little to no coffee solubles. Immersion is therefore less efficient, but more consistent.
Cortado means ‘to cut’ in Spanish and is a popular drink made up of equal parts espresso and warm, lightly textured milk.
