Caffeine acts as a natural defense mechanism for coffee plants. It paralyzes and kills insects that attempt to feed on the plant's leaves or fruits. This is one of the reasons why robusta, which has nearly twice the amount of caffeine, is a lot more resistant to pests.
The main compound responsible for the brown colour of coffee is melanoidin, which is formed when sugars and amino acids react during roasting. This known as the Maillard reaction.
Coffee was one was the first foods ever to be freeze-dried: During World War II, freeze-dried coffee was developed for soldiers as a way to have coffee that could be easily transported and brewed on the battlefield.
