3 Coffee Facts
Cold brew is very popular, but what is it exactly? Simply, it is coffee brewed with cool/cold water rather than hot. Cooler water temperatures mute acidity, so if you like sweeter and full-bodied brews with little to no perceived acidity, then cold brews are your jam! First recorded in Japan in the 1600s, the slow drip version is known as the Kyoto-style brew. Here, cool water moves through a coffee bed one drop at a time, over several hours.
Have you tried sifting ground coffee before brewing? While a fairly tedious and messy process, it eliminates most of the fines and larger particles and gives you a much more uniform grind. The resulting brews have increased clarity and acidity. Although not for everyone, it’s worth trying at least once!
Different grinder brands communicate grind size differently. Common units of measurement are clicks or random numbers that mean nothing. This makes it quite challenging to translate one brand’s grind setting to another, and is why companies like Bentwood and Orphan Espresso are starting to use microns.
